Cardamom Coconut Cranberry Healthy Granola

Ingredients
  

  • 3 cups oats gluten free
  • 1 cup puffed quinoa
  • 1 cup almonds
  • ¾ cup pecans, roughly chopped
  • 1 tbsp cardamom
  • 1 tsp ceylon cinnamon
  • pinch of salt
  • ½ cup maple syrup
  • cup coconut oil, melted or other neutral oil
  • 2 tsp pure vanilla extract
Mix ins after the granola has baked
  • dried cranberries
  • roasted coconut flakes

Method
 

  1. Preheat the oven to 170℃ and prepare one baking tray.
  2. Mix all of the dry ingredients together in a large mixing bowl.
  3. Add all of the wet ingredients to the granola and mix again until all the pieces are covered in the wet ingredients.
  4. Pour the granola over the baking tray and spread it out as an even layer.
  5. Bake the granola for 10 minutes, then stir and spread it out again evenly and pat down so nice clumps form.
  6. Bake the granola again for about 8-10 minutes until the granola is golden brown.
  7. Let the granola rest for 45 minutes until it has completely cooled. This enables the pieces to clump together better.
  8. Break the granola into chunks, add the coconut flakes and cranberries.
  9. Store the granola in an air tight container.
  10. Enjoy with your favourite (vegan) milk or yogurt, or on a smoothie bowl! :)
