Add all of the ingredients for the base in a food processor. Mix until the mixture is consistent of small pieces, and sticks together.
Press the base mixture in a pie form, or small muffin forms if you want mini cheesecakes.
Spread out a layer cherries on top of the chocolate base.
Mix all of the cheesecake filling ingredients together in a mixing bowl with a whisk or electric hand mixer. Taste test the mixture to see if you'd like to add more sweetener or lemon, etc.
Pour the cheesecake filling over the cherries and crust.
Place the cheesecakes in the freezer until set.
Once the cheesecakes have set, decorate them with fresh cherries and raw cacao nibs. Enjoy!
