Healthier Vegan Pumpkin Scones

Ingredients
  

  • 1 ¾ cups all purpose flour
  • ¼ cup graham flour
  • 4 tbsp cold vegan butter
  • 2 tsp pumpkin spice
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch of sea salt
  • 3 tbsp brown sugar or coconut sugar
  • 1 ¼ cup pure pumpkin purée
  • 2 tbsp oat milk
  • 1 tsp pure vanilla extract

Method
 

  1. Preheat oven to 180°C.
  2. Mix together all of the dry ingredients in a medium sized mixing bowl. Then add the cold butter in cubes. Pinch the butter together with the dry mixture until coarse crumbs are produced as a result.
  3. Then mix the wet ingredients in a small bowl. Mix well. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Knead the dough slightly.
  5. Form 8 scones.
  6. Place the scones on baking sheets. Bake in the oven for 16-18 minutes until the edges have browned slightly.
  7. I like to eat these with vegan butter and cloudberry jam and a cup of coffee or tea. Enjoy!!
