Healthy Chocolate + Peanut Butter Puffed Quinoa Squares

Delicious and easy to make chocolate and peanut butter puffed quinoa squares. This recipe is super quick to make and has healthy ingredients!

Ingredients
  

  • 1 1/2 Tsp pure vanilla extract
  • 1/2 Cup natural peanut butter
  • 8 fresh dates
  • 1/4 Cup maple syrup
  • 2 Cups puffed quinoa
  • 150 g dark vegan chocolate
  • sea salt flakes for sprinkling on top

Instructions
 

  • Blend the dates together in a food processor until super creamy.
  • Then add the creamy dates to a mixing bowl and mix in with the peanut butter, vanilla and maple syrup (if your peanut butter isn’t really creamy then you might have to heat it up first until it’s silky smooth, add the other ingredients in the pan then with the PB. OR add the PB and other ingredients except chocolate and puffed quinoa to the food processor to mix until creamy).
  • When well combined add the puffed quinoa. Press the mixture into a square pan and smooth it out evenly.
  • Melt the chocolate in a water bath (or carefully in the microwave) and pour over the quinoa squares. When the chocolate is smooth and ready add the sea salt flakes.
  • And then enjoy when the chocolate has set!
