½cupdried cranberries, dried lingonberries, or raisinschoose whichever you prefer all are good :)
Instructions
Preheat oven to 175°C. Prepare two baking sheets with a silicon baking mat or parchment paper so the granola doesn't stick to the pans.
Add all of the dry ingredients to a large mixing bowl and mix until the spices have been distributed evenly.
Add the wet ingredients to the bowl and mix until every oat has been covered .
Pour the granola onto the baking sheets and spread out evenly.
Bake in the oven for 10 minutes and remove from the oven to stir the granola. After stirring the granola press it down using a spatula. This helps bigger clumps form.
Bake the granola again for about 8 minutes depending on your oven. Keep an eye on the granola so it doesn't get too much colour and burn.
Remove the granola from the oven and let it cool undisturbed for about 30-40 minutes.
Add the dried cranberries/lingon and the coconut flakes. Stir together. Store the granola in airtight containers.

If you have a smaller household it works great to make a half batch of this granola.
