Healthy Golden Citrus Chia Pudding (Gluten Free and Vegan)

Ingredients
  

  • 2 cups plant milk I like to use oat milk
  • cup chia seeds
  • 1 tsp turmeric
  • ½ tsp cardamom
  • ½ tsp ginger
  • splash pure vanilla extract
  • grind or two black pepper
  • pinch sea salt
  • pinch ground saffron optional
  • agave syrup or maple syrup optional
  • 2-3 tbsp unsweetened shredded coconut

Toppings

  • blood orange slices
  • mango slices
  • coconut yogurt or vanilla yogurt plant based

Instructions
 

  • Mix all of the chia pudding ingredients together in a mixing bowl or in a reusable container (I like mixing the pudding together in a container that I can close with a lid when the chia pudding sets in the fridge). I find it's easiest to mix all of the dry ingredients together, then whisk in the wet ingredients.
  • When the pudding is completely combined, let it sit for 10-15 minutes. Then mix again.
  • Seal the container and then place the pudding in the fridge to allow the chia seeds to expand. This takes about 3 hours, or let it chill overnight and then it's ready for breakfast!
  • When the chia pudding is ready, layer it with your favourite coconut or vanilla (plant based) yogurt. Then top it with slices of blood orange and mango. And enjoy!!
