Mix all of the chia pudding ingredients together in a mixing bowl or in a reusable container (I like mixing the pudding together in a container that I can close with a lid when the chia pudding sets in the fridge). I find it's easiest to mix all of the dry ingredients together, then whisk in the wet ingredients.
When the pudding is completely combined, let it sit for 10-15 minutes. Then mix again.
Seal the container and then place the pudding in the fridge to allow the chia seeds to expand. This takes about 3 hours, or let it chill overnight and then it's ready for breakfast!
When the chia pudding is ready, layer it with your favourite coconut or vanilla (plant based) yogurt. Then top it with slices of blood orange and mango. And enjoy!!
