2cupsblueberries I used frozen but fresh works too
2tbspchia seeds
1tsppure vanilla extract
2tbspmaple syrup
splash of lemon juice
Instructions
Heat the blueberries on medium heat until they soften. Stir occasionally.
Mash the berries until they've broken down to the texture you like, depending on if you like a very smooth jam or not.
Turn the heat up a bit and cook the jam until the liquid has reduced until its reached the desired consistency. The jam will firm up further once it cools and the chia seeds have soaked up some of the liquid.
Add the chia seeds, vanilla, lemon, maple syrup. Stir to combine.
Remove the jam from the heat and let it cool.
Pour the jam into a clean, airtight container. Store the jam in the fridge. It will stay fresh for about a week.
