Healthy Peach Raspberry Creamy Vegan Popsicles

Equipment

  • reusable popsicle molds

Ingredients
  

  • 1 cup fresh peaches, sliced and pitted
  • ΒΌ cup cashew cream *
  • 2 tbsp agave syrup
  • 1 tsp pure vanilla extract
  • handful of fresh raspberries or raspberry jam/frozen raspberries

Instructions
 

  • Slice and remove the pits from the peaches.
  • Add the peaches, cream, agave syrup, and vanilla to a high speed blender. Mix until completely smooth.
  • Mash the raspberries until they're the consistency of jam.
  • Pour the peach mixture into the popsicle molds. Then stir in the raspberries so there will be a raspberry ripple in the popsicles.
  • Freeze the popsicles until they are frozen solid. And enjoy when they've set!

Notes

*I used homemade cashew cream consisting of soaked cashews, water, and a splash of fresh lemon juice.
