Healthy Peach Raspberry Creamy Vegan Popsicles

Ingredients
  

  • 1 cup fresh peaches, sliced and pitted
  • ΒΌ cup cashew cream *
  • 2 tbsp agave syrup
  • 1 tsp pure vanilla extract
  • handful of fresh raspberries or raspberry jam/frozen raspberries

Equipment

  • reusable popsicle molds

Method
 

  1. Slice and remove the pits from the peaches.
  2. Add the peaches, cream, agave syrup, and vanilla to a high speed blender. Mix until completely smooth.
  3. Mash the raspberries until they're the consistency of jam.
  4. Pour the peach mixture into the popsicle molds. Then stir in the raspberries so there will be a raspberry ripple in the popsicles.
  5. Freeze the popsicles until they are frozen solid. And enjoy when they've set!

Notes

*I used homemade cashew cream consisting of soaked cashews, water, and a splash of fresh lemon juice.
