Healthy Vegan Matcha Oatmeal

Prep Time 3 minutes
Cook Time 2 minutes
Servings: 1
Course: Breakfast, Lunch
Cuisine: Plant Based, Vegan

Ingredients

The Oatmeal
  • 100 ml oats
  • 200 ml oat milk or water *
  • splash of pure vanilla extract
  • pinch of sea salt
  • tsp matcha
  • 2 tbsp hot water
  • agave syrup ** optional, I didn't find it necessary
Toppings
  • 1 banana
  • raspberries
  • blueberries
  • roasted nuts for protein or nut butter

Method

  1. Boil water. Mix approx 2 tbsp hot water with the matcha and whisk until there are no matcha lumps left.
  2. Add the matcha mixture and all the other ingredients to a microwave safe bowl and mix until everything is properly combined.***
  3. Microwave the oatmeal for about 2-2.5 minutes depending on your microwave.
  4. Top with coconut flakes, raspberries, banana and blueberries and if you wish more oat milk. Add nut butter or roasted nuts for added protein.
  5. Enjoy! :)

Notes

*Oat milk makes it creamier than if you use water, but to save calories you can use water instead, or half and half!
**I didn't use agave in my oatmeal as the fruit makes the oatmeal sweeter, but if you find your matcha to be a bit too bitter you can always use a tad agave to balance out the bitterness!
***You can also cook this oatmeal on the stove but that takes a bit more time and I don't usually have the patience for that in the morning if I'm honest haha. I am definitely not a morning person so I usually cook my oatmeal in the microwave. :)
