Healthy Vegan Quick Bread - No Yeast No Knead No Butter

This loaf of bread is so divine, it's full of flavour, really moist, so quick and easy to bake, and completely healthy!

Ingredients
  

  • 200 ml fibre enriched oats cut, steamed and rolled oats enriched with wheat bran
  • 200 ml white flour
  • 200 ml graham flour
  • 100 ml rye flour
  • 150 ml pumpkin seeds
  • 150 ml sunflower seeds
  • 50 ml chia seeds
  • tsp baking soda
  • 1 tsp salt
  • 500 ml vegan yogurt
  • 50 ml bread dark syrup

Instructions
 

  • Preheat oven to 190 degrees celcius.
  • Grease a loaf pan or use parchment paper, pan size about 1.5 liter.
  • Mix all of the dry ingredients together in a mixing bowl. Once combined, mix in the syrup and yogurt. Mix together but don't over mix. It should be quite a thick and sticky batter but still quite fluffy.
  • Spread the batter into the loaf pan and smooth it out. Sprinkle seeds and oats on the top to decorate.
  • Bake the loaf in the lower part of the oven for about 1 hour. Check after about half an hour and cover with foil if the loaf has started to gain too much colour.
  • Remove the loaf from the pan to let it cool. Place on a cooling rack and cover with a tea towel.
  • Enjoy! :)

Notes

Smart tip: Sometimes I make two of these at the same time and slice and freeze one of them, it works great! :)
