200mlfibre enriched oatscut, steamed and rolled oats enriched with wheat bran
200mlwhite flour
200mlgraham flour
100mlrye flour
150mlpumpkin seeds
150mlsunflower seeds
50mlchia seeds
1½tspbaking soda
1tspsalt
500mlvegan yogurt
50mlbread dark syrup
Instructions
Preheat oven to 190 degrees celcius.
Grease a loaf pan or use parchment paper, pan size about 1.5 liter.
Mix all of the dry ingredients together in a mixing bowl. Once combined, mix in the syrup and yogurt. Mix together but don't over mix. It should be quite a thick and sticky batter but still quite fluffy.
Spread the batter into the loaf pan and smooth it out. Sprinkle seeds and oats on the top to decorate.
Bake the loaf in the lower part of the oven for about 1 hour. Check after about half an hour and cover with foil if the loaf has started to gain too much colour.
Remove the loaf from the pan to let it cool. Place on a cooling rack and cover with a tea towel.
