Method
- Start by soaking the cashews in water for about 5 hours, or overnight.
- Pour the cream and sugar into a pan on medium heat. Stir until the sugar has dissolved completely in the cream.
- Then stir in the mint, vanilla, salt, and the food colouring you have chosen to use. Mix until combined and let cool to room temperature.
- Rinse the cashews and pour them into your blender.
- Pour the creamy mixture into your blender with the cashews. Mix until completely smooth.
- Once the ice cream mixture is completely smoooth, taste test and adjust as needed. Or add more colouring if you want a stronger green colour.
- Chill the ice cream mixture.
- Pour the chilled mixture into your ice cream machine and follow the manufacturer's instructions.
- Once the program is complete, add in the oreos as you transfer the ice cream from your machine to a freezer safe container. I discovered that if you add the oreos to the ice cream machine too soon as you churn, you will end up with grey ice cream! Trial and error right?? haha

Notes
* If you aren't going to freeze the ice cream after churning, make sure the Oreos are chilled for around 24 hours before churning the ice cream. Otherwise the oreos are going to melt the ice cream if they've been sitting in room temperature.
