Matcha Pistachio Cake Bites

No-Bake Matcha Pistachio Cake Bites (Vegan + Gluten Free)

Ingredients
  

  • 3 tbsp coconut flour
  • 6 tbsp almond flour
  • 1 tbsp unsweetened shredded coconut
  • 3 tbsp maple syrup
  • 1 ½ tsp pure vanilla extract
  • cup roasted and shelled pistachios
  • 1 tbsp coconut oil
  • pinch sea salt
  • 1 ⅔ tsp culinary grade matcha from Sumo Matcha *
  • roughly 50 g (vegan) white chocolate**
  • more matcha or ground pistachios for decorating the bites

Method
 

  1. Add all of the ingredients except for the white chocolate to a food processor. Mix until quite smooth. If you prefer more texture you don't have to mix as long.
  2. Once the ingredients are mixed, you can do a taste test and adjust with more sweetener etc. Then when you are satisfied, place the mixture in the fridge for about 10 minutes to allow the mixture to cool a bit.
  3. Melt the white chocolate carefully in the microwave or in a water bath on the stove.
  4. I used a small cookie scoop to ensure the cake bites would all turn out to be the same size. I formed 8 bites with this recipe.
  5. Then roll each of the cake bites in the white chocolate. Dust with a bit of matcha powder or crushed pistachios to decorate.
  6. Let the white chocolate set before enjoying the cake bites. I placed them in the fridge, but you can also put them in the freezer to set faster.
  7. Keep the leftovers in an airtight container in the fridge. Enjoy!

**If you are following a strict diet where you need to avoid white chocolate, you can roll the cake bites in shredded coconut or chopped pistachios instead.
