Instructions
Add all of the ingredients except for the white chocolate to a food processor. Mix until quite smooth. If you prefer more texture you don't have to mix as long.
Once the ingredients are mixed, you can do a taste test and adjust with more sweetener etc. Then when you are satisfied, place the mixture in the fridge for about 10 minutes to allow the mixture to cool a bit.
Melt the white chocolate carefully in the microwave or in a water bath on the stove.
I used a small cookie scoop to ensure the cake bites would all turn out to be the same size. I formed 8 bites with this recipe.
Then roll each of the cake bites in the white chocolate. Dust with a bit of matcha powder or crushed pistachios to decorate.
Let the white chocolate set before enjoying the cake bites. I placed them in the fridge, but you can also put them in the freezer to set faster.
Keep the leftovers in an airtight container in the fridge. Enjoy!
