Strawberries and Cream Healthy Raw Vegan Bliss Balls with Strawberry Filling

Ingredients
  

Bites

  • 1 cup cashews
  • cup shredded coconut
  • 1 ½ tsp pure vanilla extract
  • 3 medjool dates
  • 2 tbsp oat cream
  • 3 tbsp freeze dried strawberries
  • pinch of sea salt

Filling

  • mashed fresh strawberries OR strawberry chia jam

Icing Alternatives (choose any of the 3)

  • coconut butter
  • vegan white chocolate
  • shredded coconut
  • freeze dried strawberries

Instructions
 

  • Add all of the ingredients under 'Bites' to a food processor except for the strawberries. Mix until it's a smoothish thick texture. Then add the strawberries so some chunks remain intact. Taste the mixture and adjust to your taste.
  • If the mixture is too warm and soft to work with, you can chill the mixture in the fridge until it's more firm. Form the mixture to round bliss balls. Press an indent into the ball and fill with mashed strawberries or strawberry jam. Cover the filling.
  • Roll the bliss balls in melted vegan white chocolate or whichever topping you choose. Sprinkle freeze dried strawberries on the bliss balls.
  • Place the bliss balls in the freezer to allow them to set.
  • Keep any leftovers in an airtight container in the fridge or freezer. Enjoy!!
