The Creamiest Healthy Vegan Pumpkin Pie Oatmeal

Ingredients
  

  • 100 ml oats
  • 50 ml pure pumpkin purée
  • 100 ml oat milk
  • 100 ml water
  • generous pinch of pumpkin spice (or a mix of cinnamon, ginger, cardamom, nutmeg, allspice)
  • ¼ tsp vanilla extract
  • pinch of sea salt
  • sprinkle of coconut sugar optional
Toppings
  • pumpkin seeds
  • maple syrup or date syrup
  • oat milk

Method
 

  1. Stir all the ingredients together in a microwave safe bowl.
  2. Cook the oatmeal in the microwave for 2-3 minutes.
  3. Stir again.
  4. Top with pumpkin seeds, walnuts, maple syrup or date syrup, and oat milk.
  5. Enjoy!
