Tropical Citrus Healthy Raw Vegan Cheesecake

Fresh, tangy, super creamy, and perfectly sweet. Super easy to make. I looove this dessert.

Ingredients
  

Base

  • 7 dates
  • ¼ cup shredded coconut
  • ¼ cup raw cashews
  • ¼ cup oats
  • ½ tsp pure vanilla extract
  • 1 tbsp melted coconut oil
  • pinch of sea salt

Filling

  • 1 cup soaked cashews soaked for 6 hours, drain and rinse them before using
  • 1 cup coconut cream
  • cup maple syrup
  • 50 ml melted coconut oil
  • juice from one lemon
  • juice from approximately half a lime
  • 1 tsp pure vanilla extract
  • a pinch of sea salt

Fresh Fruit Toppings

  • mango
  • passion fruit pulp
  • lemon or lime slices

Instructions
 

  • First soak the cashews for a total of about 6 hours so they will blend smoothly.
  • Mix all the ingredients for the base in a food processor until the mixture breaks down into small crumbly pieces. Press the mixture into small silicone muffin cups or a small pie dish. Set aside.
  • Mix all the ingredients for the cheesecake filling together in the food processor until the mixture becomes completely smooooth and creamy. Taste the mixture to see if you would like to add more citrus or syrup to adjust the taste. Then pour the mixture evenly divided into the muffin cups, or your pie dish. Then place the cheesecakes into the freezer so they can set.
  • Before serving let them soften up a little bit at room temperature. Then top the cheesecake with the fresh fruit toppings, and enjoy! :)
