Vegan Apple Pie French Toast

Ingredients
  

French Toast Ingredients

  • 2 slices of bread
  • ¼ cup plant based milk (I used oat)
  • 1 tbsp corn starch
  • tsp baking powder
  • ½ tsp ceylon cinnamon
  • 1 tsp maple syrup
  • ½ tsp vanilla extract
  • pinch of salt
  • about 2 tbsp vegan butter for frying

Caramelised Apple

  • 1 apple peeled
  • ¾ tsp ceylon cinnamon
  • ½ tsp cardamom
  • 1 tbsp brown sugar coconut or raw whichever is preferred
  • splash of vanilla
  • 1 tbsp vegan butter to cook the apples in

Toppings

  • vegan vanilla custard
  • pecans
  • maple syrup

Instructions
 

  • Peel and slice an apple in thin slices.
  • Whisk together all the ingredients and then dip the bread in the liquid for about 10 seconds on each side.
  • Heat up a pan on medium heat for the apple slices and add the vegan butter then the apple slices and other apple topping ingredients. Flip the slices as they brown and soften.
  • Then cook the bread for 2-3 minutes on each side on medium heat until the slices are golden brown.
  • Then assemble everything on a plate and enjoy!!

Notes

I modified a basic Vegan French Toast recipe from Nora Cooks to make this french toast recipe, I altered her recipe and then I added all the apple pie toppings.
