Whisk chia seeds with oat milk, coconut cream, vanilla, and freshly squeezed blood orange juice. Set aside to thicken.
Rub the zest together with sugar between your fingers.
Whisk/sift all the dry ingredients together in a mixing bowl.
Mix the coconut oil and sugar/zest mixture in with the rest of the wet ingredients.
Combine the wet and dry mixtures until just combined. Don't over mix.
Fill the loaf pan and bake in the oven for 37-40 minutes until a cake tester comes out basically clean.
If you want to make the glaze, wait until the loaf has cooled before pouring over the glaze.
To make the glaze simply whisk all the ingredients together. I sift in the sugar so the glaze is clump free. Then pour the glaze over the loaf. You can add more blood orange juice if the icing is too thick, or more powdered sugar if it's too runny.
Crush/finely chop the pistachios and sprinkle over the loaf.
