2tspfreshly squeezed juice from an orange
78ggranulated sugar
100gunsalted vegan butter, room temperature
2tbsplight syrup
139gall purpose flour
1tspbaking powder
pinchsea salt
unsalted pistachios
Instructions
Preheat oven to 175°C and prepare two baking sheets.
Begin with pressing the orange. Mix the saffron with the juice from an orange in a small bowl and let the saffron combine with the liquid. Add the syrup and mix again.
Zest a clean, organic orange and add the zest to the bowl with the saffron and orange juice.
Cream the vegan butter and sugar in a medium bowl. When it's fluffy, mix in the saffron mixture.
Once it's combined, sift in the baking powder and flour to the wet mixture until just combined.
Chop the pistachios into fine pieces.
Form 18 dough balls. Then dip each ball into the pistachios. Press the dough balls slightly as you place them on the baking sheets.
Bake for approximately 10 minutes until the edges have gained a slight golden colour.
Let the cookies cool completely before enjoying! :)
