Method
- Bake these Vegan Tahini Chocolate Chunk Cookies.*
- Once the cookies are baked, prepare the ice cream.
- Add the oat cream to a saucepan on medium heat and mix in the corn starch. Stir and cook. Let simmer until the mixture has thickened.
- Mix in the sugar, vanilla and salt until completely dissolved and combined.
- Mix the cashews together to a silky smooth cashew cream in a blender.
- Mix the cashews in with the oat mixture. Let the mixture cool before pouring in an ice cream machine.
- Pour the mixture into an ice cream machine and let it churn until the machine doesn't mix anymore.
- When the ice cream is ready, take a scoop of ice cream and sandwich between two cookies. Roll the ice cream in chocolate chips if you desire or eat as is! Enjoy!!
Notes
