Method
- Preheat oven to 200 degrees celcius.
- Prepare a loaf pan, grease the sides or use a sheet of parchment paper to line the loaf pan.
- Mix all of the dry ingredients together in a large mixing bowl.
- Once all the dry ingredients are combined, pour in the yogurt and the syrup and mix until just combined but be careful not to overmix!
- Add the mixture to the loaf pan and sprinkle a bit of extra oats on top if you wish to decorate the bread.
- Place the loaf in the bottom part of the oven and let it bake for about 1 hour depending on your oven. Make sure you check through the window at about 40 minutes though and see if your loaf has too much colour, then cover the loaf with foil and continue to bake the rest of the time. When the bread is done a testing knife should come out clean.
- When the bread has finished baking, remove it from the oven. Remove the loaf from the loaf pan and let it cool on a cooling rack covered with a tea towel.
- Enjoy with your favourite plant based butter or some nut butter! :)
Notes
*In Scandinavia we have a common dark bread syrup used in bread baking, and according to my googling around, a close substitution for the dark bread syrup I used, it is a bit sweeter and less bitter than American light molasses I believe. So something similar to that might work. Just make sure not to use a syrup that has a very strong flavour.
