This recipe for Healthy Vegan Cinnamon Raisin Bread – No Yeast or Kneading is inspired by a cinnamon raisin bagel that I used to be able to buy in my home town and dang, it is sooo delicious. So I decided to try and make my own version, but make it a loaf because quick and easy recipes that are also healthy and delicious are really hard to beat (for me anyway hehe). This bread has so much flavour from the cinnamon and the mixture of flours and oats, has great texture, is super moist because of the raisins, and as if it couldn’t get any better but this bread is SO quick and easy to make too! This loaf requires no kneading and no yeast so you don’t have to wait for the dough to rise! Heavenly.

This Healthy Vegan Cinnamon Raisin Bread – No Yeast or Kneading recipe is our favourite bread at home, and it never lasts for long. As my boyfriend says ”this bread is dangerously good and you can quote me on that!” Thank goodness it works great to freeze this bread, so I usually bake two loaves at the same time and freeze one. So just double the recipe if you wish to do the same! 🙂 I hope you love my cinnamon raisin bread as much as we do!

Healthy Vegan Cinnamon Raisin Quick Bread

Healthy, delicious, quick and easy bread with flavours of cinnamon and raisins.

Ingredients
  

  • 200 ml fibre enriched oats
  • 200 ml graham flour
  • 250 ml white flour
  • 50 ml rye flour
  • 180 ml raisins
  • 50 ml chia seeds
  • 1 tbsp fresh ceylon cinnamon
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 50 ml dark bread syrup *
  • 500 ml plant based yogurt

Instructions
 

  • Preheat oven to 200 degrees celcius.
  • Prepare a loaf pan, grease the sides or use a sheet of parchment paper to line the loaf pan.
  • Mix all of the dry ingredients together in a large mixing bowl.
  • Once all the dry ingredients are combined, pour in the yogurt and the syrup and mix until just combined but be careful not to overmix!
  • Add the mixture to the loaf pan and sprinkle a bit of extra oats on top if you wish to decorate the bread.
  • Place the loaf in the bottom part of the oven and let it bake for about 1 hour depending on your oven. Make sure you check through the window at about 40 minutes though and see if your loaf has too much colour, then cover the loaf with foil and continue to bake the rest of the time. When the bread is done a testing knife should come out clean.
  • When the bread has finished baking, remove it from the oven. Remove the loaf from the loaf pan and let it cool on a cooling rack covered with a tea towel.
  • Enjoy with your favourite plant based butter or some nut butter! 🙂

Notes

*In Scandinavia we have a common dark bread syrup used in bread baking, and according to my googling around, a close substitution for the dark bread syrup I used, it is a bit sweeter and less bitter than American light molasses I believe. So something similar to that might work. Just make sure not to use a syrup that has a very strong flavour.
