Healthy Everyday Granola
This is one of my absolute favourite breakfasts that gets me excited to get out of bed in the morning and eat brekkie and drink my morning coffee. It’s so quick to make, and easily adaptable. I’ve tried many granola flavour combinations but this is the one that seems to always be in our granola jars at home (except around Christmas time when I make my Healthy Gingerbread Granola!). I love that it has lots of nuts, pumpkin seeds, raisins, and coconut, with lots of warm spices. It tastes like dessert for breakfast (but still healthy!). What a way to start your day, eh? Dreamy.
Healthy Everyday Granola
Healthy granola that tastes like dessert for breakfast! Easy and quick to make!
Ingredients
- 4 cups fibre enriched oats or whatever you have at home
- ⅔ cup almonds
- ½ cup walnuts
- ½ cup pumpkin seeds
- 1 tbsp cinnamon
- 2 tsp cardamom
- ½ tsp ginger
- ⅓ tsp nutmeg
- ½ tsp sea salt
- ⅓ cup maple syrup or less, but then the granola is more crumbly as a result. still good though!!
- ½ cup melted coconut oil or other vegetable oil
- 1 tsp pure vanilla extract
- ½ cup coconut flakes
- ½ cup raisins
Instructions
- Preheat oven to 175 C (345 F).
- Mix all the ingredients together in a large bowl, except for the raisins and the coconut flakes as they will be added after the granola has been in the oven.
- Once all of the ingredients are evenly coated by the wet ingredients, pour the granola on to a non stick baking tray or parchment paper. Spread evenly.
- Bake the granola for 10 minutes, then remove from oven and stir the granola. Spread the granola evenly across the tray again and pat so it holds together better. Bake the granola for approximately 10 more minutes depending on your oven, but make sure to keep an eye on your granola as you don't want it to burn.
- Once the granola is evenly golden brown, remove from oven. Pour the raisins and coconut flakes over the granola now as it sets and cools. Let the granola cool for at least 35 minutes before stirring it, this is rather important otherwise it can become quite crumbly. Once it has completely cooled however, you can break the granola into pieces and store in an air tight container. Enjoy as is, or with your favourite yogurt or milk alternative!
