Vegan Chocolate Peanut Butter Cups

I’m obsessed with chocolate and I looove peanut butter, so naturally reese peanut butter cups are one of my favourite treats, always and forever. So this is my healthy version that is super easy and quick to make, and is SO much better for you because you can completely control what ingredients you use. You can have no added sugar and no added fats, or you can choose to sweeten a little. YUM.

Ingredients
  

Chocolate Cover

  • 1 cup vegan dark chocolate
  • 2 tsp coconut oil
  • pinch sea salt for topping

Peanut Butter Filling

  • ½ cup organic natural peanut butter
  • 1 tbsp maple syrup
  • ½ tsp pure vanilla extract

Instructions
 

  • Mix the peanut butter filling ingredients together in a mixing bowl. It should become a thick pasty dough. I used unsweetened 100% natural peanut butter, so that can help you decide if you want to add sweetener to the filling or not. If your PB already has added sugar, then it's prob delicious without anymore. Or if you would like a sweeter treat then you can add more sweetener. I found it to be just right with one tbsp syrup. I find that the vanilla extract adds a type of sweetness as well as vanilla flavour.
  • Melt the chocolate in a water bath (or very carefully in the microwave and stir often so it doesn't burn), and add the coconut oil so it melts into the chocolate. The coconut oil makes the chocolate easier to work with.
  • Pour half of the melted chocolate into approx 12 small silicone candy cups or into any sort of small forms you have at home (ice cube tray would probably even work too, just produces a different shaped sweet is all!) so that the chocolate fully lines the bottom and part of the sides of the forms.
  • Put the cups into the fridge so the chocolate hardens.
  • Once the chocolate bottom layer has hardened you can add the peanut butter filling to each cup! Shape the PB filling into flat round discs, and leave enough space around the edges so that the top layer chocolate can cover the top and the sides of the peanut butter.
  • Use the rest of the melted chocolate and pour onto each cup so that the chocolate covers the rest of the sweet.
  • Place the cups into the fridge so the chocolate can harden completely. Once the chocolate has hardened, they pop easily out of the silicone cups. Store in an airtight container. Enjoy!
