No – Bake White Chocolate Blueberry Cake Bites (Vegan/Gluten Free)

These delightful bites are so full of flavour! The plant based bites have a vanilla and cashew cake base filled with dried blueberries mixed in, and the whole bite is dipped in white chocolate for an extra sweet and decadent touch. YUM. You can get a nice dose of antioxidants in from the blueberries and enjoy a sweet treat at the same time! These little treats are very easy to make too which makes them even better. No-Bake White Chocolate Blueberry Cake Bites

Ingredients
  

  • 100 ml cashews
  • 160 ml almond flour 2/3 cup + 1 tsp
  • 2 tbsp cashew butter
  • 1 tsp vanilla extract
  • 1-2 tbsp maple syrup * delicious in the bites but can be reduced/omitted if you are following a reduced sugar diet
  • 70 ml dried blueberries (the dried blueberries I used are sweetened with juice from apples)
  • 70 g vegan white chocolate about 1/2 cup
  • 1 tsp coconut oil

Instructions
 

  • Add the cashews, almond flour, cashew butter, vanilla, optional maple syrup/date to a food processor and mix until combined and the contents become moist and start forming a dough ball. Try pinching together a bit of the dough to test the consistency, the dough should be moist enough to roll into bites, but if the dough is too dry you can add a bit more cashew butter, maple syrup or another date if you chose to sweeten with dates.
  • Transfer the dough mixture to a bowl and mix in the blueberries.
  • Roll the dough into 8 cake bites.
  • Melt the white chocolate and the coconut oil carefully in the microwave or in a water bath on the stove.
  • Coat the cake bites with an even layer of white chocolate. Place the bites in the fridge to let the chocolate harden. Enjoy the bites when the white chocolate has set! 🙂

Notes

* I didn’t use maple syrup as the white chocolate is sweet and the dried blueberries I used are sweetened with juice from apples, but if you would like a sweeter treat you could add 1-2 tbsp maple syrup, or approx 1 moist medjool date. I recommend however using a small amount of maple syrup if your blueberries aren’t sweetened, I found it made a difference when I used unsweetened dried blueberries for this recipe. 🙂
*If you find the mixture is too dry to roll into the cake bites you can add an extra tbsp of cashew butter or coconut oil, or 1 moist medjool date.
