Healthy Strawberry Rhubarb Compote (Vegan and Refined Sugar Free)

This strawberry rhubarb jam is SO delicious! It’s got a perrrfect balance of sweet and tart it’s really delightful. This recipe is summer on a spoon. I used strawberries and rhubarb from the garden, it is SO satisfying and magical using homegrown produce everything just tastes so much better. This recipe uses limited sugar to achieve a great taste and texture. I’ve used more strawberries than rhubarb so less sugar is needed. Chia seeds can be added to set the compote a little but it’s optional.

I’m not really sure what to call this recipe really, compote or jam? Doesn’t matter anyway because it can absolutely be used as either! Use this healthy strawberry rhubarb compote on oatmeal, toast, ice cream, pancakes, Panna Cotta, and more! The possibilities are endless really. So what are you waiting for?? Healthy Strawberry Rhubarb Compote (Vegan and Refined Sugar Free)

Ingredients
  

  • 1 ⅓ cup rhubarb
  • 2 cups strawberries I used frozen and it was about 320 g
  • 1 ½ – 2 tbsp chia seeds optional
  • 2-3 tbsp whole cane sugar or coconut sugar. adjust to your taste

Instructions
 

  • Chop the rhubarb in small pieces, approx 1 cm pieces.
  • Add rhubarb to a medium sized saucepan on medium heat. If you're using frozen strawberries, you can add them now as well, but if you're using fresh strawberries wait for the rhubarb to get a bit soft before adding the strawberries since they don't take as long to soften. Let it simmer and let the liquid reduce.
  • Once the fruit has softened a bit, add the sugar and use a potato masher to mash the strawberries and rhubarb down to the desired consistency.
  • When the compote has become completely soft, taste the compote (let it cool first on a spoon!) and adjust sweetness if needed. Add the optional chia seeds.
  • Remove the compote from the heat. And let it cool before storing in an airtight container in the fridge. Enjoy!
