Chocolate Espresso Protein Bites (Vegan, No-bake)

This is one of my favourite quick and healthy snacks to make when I need to satisfy my sweet tooth. It is super easy, doesn’t take long to make, and has simple ingredients. These bites are sweet and packed with flavour, and bonus, they’re healthy and filling! I don’t really think you can go wrong with anything chocolate or coffee flavoured really.

Ingredients
  

  • 100 ml raw cashews
  • 100 ml roasted almonds* (or raw! but I usually use roasted almonds that I have ready to go in the cupboard almost at all times because the flavour is so good)
  • 100 ml fibre enriched oats (or whichever kind you have at home I’m sure is fine)
  • 1 tsp pure vanilla extract
  • 2 tbsps cold espresso
  • 2 tbsps raw cacao powder
  • 2 rounded tbsps coconut oil
  • 14-15 dates depending on size
  • 1 pinch sea salt
  • unsweetened shredded coconut to roll the bites in

Instructions
 

  • Chill espresso in the fridge before you make this recipe, and roast almonds. Roasted almonds give such a nice, impactful flavour in this recipe, it’s totally worth the extra steps. 
  • Mix all ingredients in a food processor. Once the mixture is moist and clumping together well, you can roll the mixture into balls.  
  • Roll the balls in shredded coconut.
  • Chill in fridge to set, and enjoy!

Notes

*Before making this recipe roast raw almonds in the oven for about 10 minutes at 175 degrees Celsius. Since the time needed varies depending on the oven, keep an eye on the almonds, because you don’t want them to burn! Otherwise if you would like to keep the recipe raw, simply use raw almonds of course, but the flavour is richer with the roasted almonds.
