Healthy Apple Pie Granola (Vegan / Refined sugar free)

This granola tastes like a crunchy apple pie, except healthy!! I love granola for breakfast, and this one is a new flavour I created! There’s just something that is so cosy about apple pie, and I couldn’t resist making a granola recipe inspired by apple pie. This granola has cosy apple pie spices, pieces of apple, nuts, and loads of other healthy ingredients that will keep you happy and satisfied long after breakfast. This is definitely a tasty way to start your day!

Healthy Apple Pie Granola

Healthy granola with apple pieces, apple pie spices, nuts, raisins, etc! This granola is full of all the good stuff and so easy to make!

Ingredients
  

  • 4 cups oats
  • cup raw walnuts
  • ½ cup raw almonds
  • 1 tbsp ceylon cinnamon
  • 1 tsp cardamom
  • ½ tsp ginger
  • tsp nutmeg
  • ½ tsp salt
  • 1 tsp pure vanilla extract
  • cup maple syrup
  • ½ cup melted coconut oil or other neutral vegetable oil
  • ½ cup raisins *
  • ½ cup coconut flakes *
  • 1 cup dried apple pieces * (either purchase chopped, dried, unsweetened apple pieces or make your own by drying in your oven)

Instructions
 

  • Preheat oven to 175°C, and prepare a non stick baking sheet or cover with parchment paper.
  • Aside from the raisins, coconut flakes, and apple pieces, mix the rest of all of the ingredients together in a large mixing bowl. Mix until completely combined.
  • Pour the granola onto a baking sheet and evenly spread it out across the tray.
  • Bake the granola for 10 minutes, and remove from the oven. Stir the granola and then press it down with a spatula to ensure the granola pieces bake evenly and hold together so the granola will clump together properly. Place the granola back in the oven and bake for another 10 minutes approximately, depending on the oven. The granola is done when it has a slight golden brown colour around the edges, but be careful not to let it gain too much colour because then it might get a burned flavour. 🙁
  • Once the granola is done baking, let it cool uninterrupted for at least 40 minutes. Then you can add the raisins, apple, and coconut flakes and break the granola up into pieces the size you wish. If you try and complete this step before the granola has completely cooled it crumbles easily. Store the granola in an airtight container. This granola is tasty with plant milk, yogurt, on smoothies, or just as is! Enjoy!

Notes

*I prefer to add these ingredients after baking the granola, since the apple, coconut and raisins are dried.
