Healthy Raw Vegan Gingerbread Bites

These Healthy Raw Vegan Gingerbread Bites taste like little pieces of gingerbread dough… but are totally good for you. Made only with simple, wholesome ingredients. Super easy to make too. These are perfect to snack on during the holidays when you want something tasty but also nutritious.

Enjoy these healthy gingerbread bites with a cup of mulled wine, or coffee, or go ahead and crumble them into some vanilla ice cream (I can highly recommend that combo…yum!).

Ingredients
  

The Bites

  • 100 ml walnuts
  • 100 ml roasted almonds *
  • 50 ml fibre enriched oats
  • about 15 dates make sure the dates are moist and fresh, otherwise the bites won't hold together as well and will not be as sweet**
  • 1 rounded tsp cinnamon
  • ½ tsp dry ground ginger
  • ¼ tsp cardamom
  • ¼ tsp cloves
  • tsp nutmeg
  • 2 tbsp melted coconut oil
  • ½ tsp pure vanilla extract

Toppings

  • 100 ml roasted almonds for coating the bites

Instructions
 

  • First throw the almonds in the food processor that are to be used to roll the bites in. Mix the almonds until they're in tiny pieces, or the size you would prefer to coat the bites with. Once this is done, empty the crushed almonds into a bowl to be used later. Set aside.
  • In a food processor mix the walnuts, almonds, and oats together until they are in small pieces.
  • Add all the remaining ingredients in the food processor. Mix well to combine until the dates are all smooth and the mixture is smooth and basically rolling into one ball. Then you will get creamy gingerbread bites. Taste the 'dough', and adjust the spices or amount of dates to your taste.
  • If the dough is quite warm after mixing, let it chill in the fridge for a while, then it will be easier to roll the bites. Otherwise it can get quite sticky to work with. If the mixture is easy to work with however, roll the dough into roughly 14 or 15 bites. After the bites are shaped, roll them in the crushed almonds from earlier until they are evenly coated. If you have leftover crushed almonds, simply enjoy it on some yogurt etc or save for a different recipe!
  • Done! Store the bites in a container in the fridge. Enjoy!

Notes

*I prefer to use roasted almonds in this recipe because they get a way richer flavour that way. It is super easy to roast your own almonds, just roast the almonds in the oven at 180 C for about 10 minutes on a baking tray, or until you see the almonds are golden brown and giving off a lovely aroma. But keep an eye on them so they don’t burn! Then the recipe isn’t technically a ”raw” recipe if you use roasted almonds, so if you want raw almonds, I suggest maybe starting with a little less spice and work your way up after doing a taste test. 
**Soak the dates for about 30 min beforehand if they’re very dry (and make sure to properly drain them before using).
