No-Bake Coconut Vanilla Cake Bites (Vegan / Gluten Free / Raw)

These lil round cake bites are a super tasty treat for the weekend. These cake bites are vegan, gluten free, no-bake, and totally healthy for you. The cake bite is made of cashews, shredded coconut, coconut and almond flour, maple syrup, vanilla and plant milk. For optimal taste I suggest you coat them in white chocolate which of course doesn’t make them as healthy anymore… but it’s totally worth it because the white chocolate makes all the difference! BUT if you do however wish to keep them healthy you can simply roll them in shredded coconut which is also delicious!

Sweet coconutty vanilla cake bites that are beyond easy to make!

Ingredients
  

  • 3 tbsp coconut flour
  • 5 tbsp almond flour
  • 1 tbsp unsweetened shredded coconut
  • 1 ½ tbsp melted coconut oil
  • 3 tbsp maple syrup
  • 1 ½ tsp vanilla extract
  • cup raw cashews
  • 1 tbsp plant milk I used oat milk but you can use another kind if you want gluten free
  • little pinch of sea salt
  • cup chopped vegan white chocolate* approx 35g for rolling the bites in
  • coconut sugar for decorating to sprinkle on the white chocolate (totally optional I just used it to make the bites extra pretty!)
  • more shredded coconut for rolling the bites in if you choose to skip the white chocolate for healthier cake bites*

Instructions
 

  • Toss everything in a food processor and mix until combined and the contents become a moist and large dough ball. The dough should be moist enough to roll into 8 balls, but if the dough is too dry you can add a bit more extra plant milk.
  • Once the dough rolls nicely into ball shaped cake bites, form 8-10 bites with the dough.
  • Melt the chocolate carefully in the microwave or on the stove using a water bath. When the chocolate is ready, roll the bites in the chocolate. If you're feeling fancy, sprinkle a tiny pinch of coconut sugar on top to make the bites extra pretty! Once all the bites are decorated, place them in the fridge or freezer for the chocolate to harden before enjoying the cake bites.

Notes

*If you don’t want to roll the cake bites in white chocolate it works great to roll them in shredded coconut!
