No Bake Vegan Fudge Brownies 🤤🍫 These brownies are sneakily healthy, gluten free, raw, refined sugar free and vegan. Not to mention they are soo chewy and full of flavour. Dreamy! What more could you want?? These brownies are most delicious if you roast the hazelnuts, but if you follow a raw diet then you can simply use raw nuts (still delicious!!). Also, this treat freezes really well if you want to save some for a later date! 🙂 Enjoy!

Ingredients
  

Fudge Brownie

  • 1 cup raw walnuts
  • 1 ¾ cup dates
  • cup roasted hazelnuts or raw if you follow raw diet
  • 4 ½ – 5 tbsp raw cacao depending on your taste
  • 1 ½ tsp vanilla extract
  • 2 tsp espresso skip if raw diet
  • pinch of sea salt
  • 2 tsp water

Chocolate Frosting Alternative 1*

  • chocolate hazelnut butter homemade or purchased

Chocolate Frosting Alternative 2*

  • ½ cup dates
  • 5 tbsp hazelnut butter or almond butter
  • 3-4 tbsp raw cacao
  • ½ tsp vanilla extract
  • 2 tsp espresso skip if raw diet, add a tsp or two of water instead
  • 1 tbsp water
  • 2 tsp melted coconut oil (or water if you’re avoiding oil)

Toppings

  • chopped hazelnuts
  • sea salt flakes

Instructions
 

  • Add everything for the fudge brownie to a food processor and mix until completely smooth, or stop mixing earlier and leave some chunks if you want a bit of a crunch. Taste and adjust ingredients to your desire. Once it's all mixed, add the brownie mixture to a small container that can be sealed with a lid. I used a regular glass container and lined it with a bit of parchment paper so I could easily lift the brownies out because the mixture can be a bit sticky when warm! Smooth the brownie batter out evenly in the container and press it flat. Place the lid on the container and put in the freezer to set.
  • If you have chosen to make frosting, then during this time add all the frosting ingredients to the food processor (you don't need to clean it first!) and mix until smoooth. Adjust the ingredients to your taste.
  • Once the brownie has set, after about 20-30 minutes then you can frost the brownie! Sprinkle chopped hazelnuts and sea salt on top and you’re done! Place in the fridge to let the frosting set before enjoying. Store the brownie in an airtight container in the fridge. Enjoy!

Notes

This brownie I kept stored in the fridge in a sealed container, but as I mentioned earlier, it works great to store any brownie leftovers in the freezer too! Make sure to cut the brownie into pieces before storing it in the freezer though.
 
*I have a few alternatives for frosting.
First alternative: simply spread some chocolate hazelnut butter on top and sprinkle some chopped hazelnuts and sea salt on top! Easy! Delish!
Second alternative: mix the cacao, date, nut butter frosting, and top with the hazelnuts.
Third alternative: if you don’t feel like making frosting, these brownies are so decadent without any extra frosting, just sprinkle on the hazelnuts and enjoy! 🙂
