If you LOVE chocolate then this recipe is for YOU. I mean, it’s creamy chocolate ice cream with a chocolate hazelnut ripple, and filled with No Bake Fudge Brownie Chunks!! Like is that perfect or what?? Oh I even forgot to mention it’s vegan and made with healthier ingredients. There is no heavy cream because it’s swapped out with healthy avocado! And this ice cream is made with reduced sugar! Now you might be sceptical after hearing that this ice cream is healthier than your average ice cream recipe, but don’t worry… this ice cream is SO creamy, rich, and decadent.

This is a vegan recipe that does not use coconut milk, and no cashews either. The ice cream base has a really creamy and neutral taste it works wonderfully with all the flavours added. Vegan Triple Chocolate Hazelnut Fudge Brownie Ice Cream

  • Ice Cream Machine

Ingredients
  

  • ½ cup avocado
  • 2 cups oat cream 13% (500 ml) oatly brand
  • ⅓ cup + 2 tsp unsweetened cocoa powder (90 ml)
  • 1 tbsp corn starch
  • 80-100 ml raw cane sugar depends on your preference, but I think 80 ml is delicious but taste the mixture and add more sugar if needed!
  • 2 tsp vanilla extract
  • 1 tsp coffee/espresso powder
  • 3 tbsp chocolate hazeulnut spread homemade or store bought
  • pinch of salt

No Bake Vegan Fudge Brownies

  • cacao nibs

Instructions
 

  • Pour the oat cream and corn starch into a saucepan on medium heat. Mix together and simmer until it thickens. Remove from heat. Add the cocoa, sugar, vanilla, coffee powder, and salt. Mix to combine.
  • Once the mixture has cooled a bit, pour the ice cream mixture into a high speed blender with the avocado and hazelnut spread and mix until completely combined.
  • When the mixture is cool enough, pour it into your ice cream machine and let it churn for the full program.
  • Make these brownies to add to the ice cream while the ice cream is churning in the machine.
  • Once the brownies are prepared, either toss brownie pieces in the machine as the ice cream is churning or simply place brownie pieces on top of your serving.
  • When the churning program is complete, depending on your preference/machine, either serve right away or freeze until the ice cream is completely set.
  • To serve, toss on some chopped roasted hazelnuts and cacao nibs on your ice cream and enjoy!!
