Snowy White Chocolate Matcha Vegan Tree Cookies
These Snowy White Chocolate Matcha Vegan Tree Cookies are the perfect holiday cookie!! They have a really delicious matcha flavour which is balanced beautifully by the sweet vegan white chocolate and coconut decorations! The freeze dried raspberries add an extra delicious element to these cookies as well, but I only chose to decorate about half of the batch of cookies with raspberry because I really liked the look of simply snowy trees as well. These cookies are SO cute, they look like little decorated Christmas trees, or snowy trees in the forest, so really you can eat these all winter season long if you want to!
These Snowy White Chocolate Matcha Vegan Tree Cookies are super soft and chewy and soooo good. I’m in love! I really wanted to make classic vegan sugar cookies for christmas since they are so cute (with matcha flavouring though of course), but I really dislike how flavourless sugar cookies often are. Many sugar cookies I have tried have been very sweet, dry and crumbly and that is soooo NOT what I wanted. I wanted soft and chewy holiday cookies with loads of flavour. And my goodness did I succeed! I love these cookies, and if you love matcha as well, you will love these cookies too!
Make sure you use good quality matcha for these cookies. I tried two different brands, and the better quality absolutely made a difference. The colour is a bright, clear green when you use better quality matcha, otherwise the cookies can turn out brownish yellow. That makes for some very sad holiday cookies. And even more important, the flavour is loads better if you use high quality matcha! Yum! This recipe doesn’t use very much matcha so you can enjoy the rest in matcha lattes or in other baking recipes, perhaps my No-Bake Raspberry Matcha Marble Cheesecake? 🙂
These Snowy White Chocolate Matcha Vegan Tree Cookies were so fun to decorate! Put some christmas music on and decorate these however you wish to! I tried to stick to healthier ingredients and used coconut and freeze dried raspberries instead of sugary sprinkles or frosting. I did use a bit of vegan white chocolate, but if you wanted a healthier option, coconut butter works too! These cookies are perfect for holiday gatherings or gifting in cookie boxes. Snowy White Chocolate Matcha Vegan Tree Cookies
Ingredients
- 281 g all purpose flour
- ⅔ tsp baking powder
- ¼ tsp sea salt
- 170 g unsalted vegan butter, room temperature
- 150 g white granulated sugar
- 3 tbsp unsweetened applesauce
- 2 tsp pure vanilla extract
- 1 tbsp matcha
Decorations
- vegan white chocolate or coconut butter for a healthier option
- dried coconut
- freeze dried raspberries
Instructions
- Cream the butter and sugar together until it's nice and fluffy. Then sift in the matcha and mix again.
- Add the vanilla, applesauce, and salt. Mix again.
- Sift in the matcha powder and mix again.
- Sift in the flour and baking soda and carefully mix together until just combined.
- Roll out the cookie dough on a piece of parchment paper, flour the sheet lightly if needed. Roll the dough until it's about 1/3 of a cm thick. Let the dough rest in the fridge for at least 3 hours or so until the dough has firmed up completely. I chilled the dough overnight.
- Preheat oven to 175°C. Prepare baking sheets.
- When the dough has chilled completely, use a cookie cutter to cut out the cookies. Save the leftovers and re-roll the dough and start the process over again. Keep using up all the dough to roll and make new cookies. Sprinkle the dough with a bit of flour if needed, or chill the dough again for a bit if needed.
- Bake the cookies for approximately 9 minutes. They are done when the cookie edges are a tiny bit golden, but do not let them overbake and get too much colour. Then they will become dry.
- Once the cookies have cooled, carefully melt the vegan white chocolate and drizzle over the cookies. Sprinkle the coconut and raspberries over the chocolate so they stick to the cookies.
- When the chocolate has set, enjoy the cookies!
