Healthy Watermelon Feta Mint Cucumber Salad
Ingredients
- watermelon
- cucumber
- feta (vegan if you wish)
- fresh mint
- lemon zest from an organic lemon
- olive oil
- sea salt
- freshly ground black pepper
Instructions
- Wash the cucumber and lemon.
- Slice the watermelon, cucumber and feta in cubes.
- Arrange the cubes in a checkerboard pattern, or toss them in a bowl.
- Zest the lemon and add the lemon to the salad.
- Chop the fresh mint leaves and add to the salad.
- Drizzle the salad with olive oil, and sprinkle it with sea salt and black pepper.
