Healthy Vegan Carrot Cake Banana Bread
I looooove this Healthy Vegan Carrot Cake Banana Bread because it’s incredibly moist and bursting with flavour. I’m obsessed with cinnamon and cardamom so I like to use a lot of those spices. I love a nicely balanced sweet and spicy loaf. The flavour of this loaf cake is so rich, and just sweet enough to satisfy a craving while still being moderately healthy. I can’t get enough of banana bread or carrot cake so I figured what the heck I’ll combine two of my favourite desserts!
Healthy Vegan Carrot Cake Banana Bread
A quick, easy and healthier spin on a carrot cake. Vegan, and wholesome ingredients with lots of warm spices.
Ingredients
- 2 cups spelt flour 230g
- ¾ tbsp ceylon cinnamon
- 2 tsp cardamom
- ¾ tsp dry ground ginger
- ¾ tsp nutmeg
- 1 tsp baking soda
- ¾ tsp baking powder
- ½ tsp sea salt
- 1 cup shredded carrot (about 2 carrots)
- ¾ cup overripe frozen bananas (about 2 medium sized)
- ⅔ cup unsweetened applesauce
- ¼ cup melted coconut oil or any other neutral oil
- ⅓ cup oat milk (or your choice of alternative)
- ½ cup packed brown sugar
- 2 tsp pure vanilla extract
- ¼ cup raisins
- crushed walnuts for topping
- coconut flakes for topping
Instructions
- First I take out the bananas from the freezer and defrost them. While the bananas are defrosting I shred the carrots.
- Preheat oven to 175 C/350 F, convection oven setting.
- Mix all dry ingredients in a medium sized bowl, and set aside. In a separate bowl whisk together the wet ingredients. Once the wet ingredients are combined you can add the wet ingredients to the dry ingredients. Stir to combine. Then pour the batter into a greased loaf pan. Once the batter is smoothed out evenly in the pan, sprinkle coconut flakes and crushed walnuts on top to decorate.
- Bake in the oven for roughly 50-55 minutes, but it depends on your oven so the time may very. I prefer a very moist loaf so when I know it's ready the toothpick tester comes out with a bit of cake on it, it's not completely clean. Keep an eye on your loaf as well, make sure it's not getting too much colour or becoming dry. Check through your oven window at roughly 35-40 minutes to see how your lil loaf is doing in the oven. 🙂
