Holiday Saffron Amaretti Cookies (Vegan and Gluten Free)

These Holiday Saffron Amaretti Cookies are vegan and gluten free which means they are perfect for holiday gatherings! They fit different dietary requirements, but most importantly… they’re DELICIOUS. Amaretti are Italian almond cookies, and they can be light and crispy, or soft with a crispy outside. This recipe is the latter – Amaretti morbidi – which means soft amaretti cookies! Because I’m a sucker for soft and chewy cookies. This however have a bit of a crunchy shell with a soft inside! 🙂 Since these cookies don’t use butter they’re definitely a healthier option to bake for the holidays, but they sure are just as delicious!

I spent some time in Italy this fall and that inspired me to create this recipe for Holiday Saffron Amaretti Cookies! But I decided to make a Swedish holiday version with saffron, because saffron is a beloved flavour during the Christmas season in Sweden! Holiday Saffron Amaretti Cookies

These Holiday Saffron Amaretti Cookies are both vegan and gluten free so that means they work for many dietary restrictions at holiday gatherings this Christmas season. And treats that work for different diets is ideal! That means you don’t have to make as many different recipes if you don’t have the time or energy. Because we all know that this season can be very stressful with everything that we want to do. 🙂

Another change I’ve made to the traditional amaretti cookies aside from the saffron, they usually have bitter apricot kernels or bitter almond extract but I decided to skip that here to really let the saffron and almond flavours shine. I added a splash of lemon juice instead to add that hint of sour/bitterness.

So go ahead and bake these delicious saffron and almond crinkle cookies!! They have delicious flavour and they look so snowy and so festive what’s not to like! These will definitely be a fun addition to your Christmas cookie collection! Enjoy!

Holiday Saffron Amaretti Cookies (Vegan and Gluten Free)

Ingredients
  

  • 200 g almond flour organic from Powerfruits
  • 128 g white granulated sugar
  • ½ tsp baking powder
  • ¼ cup unsweetened applesauce
  • tsp lemon juice
  • 1 tsp vanilla powder organic from Powerfruits
  • 1 packet 0.5 g fresh ground saffron ground with a tsp or so of sugar
  • pinch of sea salt
  • powdered icing sugar to roll the cookie dough balls in

Instructions
 

  • Preheat the oven to 175℃ and prepare two baking trays.
  • In a small bowl whisk the applesauce, lemon juice, and saffran together. Then set aside.
  • Mix all the remaining ingredients together in a medium sized mixing bowl and mix until combined.
  • Pour the wet ingredients over the dry ingredients and mix until just combined.
  • Pour some powdered icing sugar into a bowl that is begin enough to roll the cookie dough balls in.
  • Using a cookie dough scooper, scoop 16 evenly sized cookies. Then roll them lightly into nice round shapes.
  • Then roll the cookie dough balls in powdered sugar. Roll them until they are completely covered in icing sugar. Place them out evenly on the baking trays and flatten them slightly, but not completely, as these don't spread very much. The flatter you press them the crispier the cookie will become.
  • Bake the cookies for about 15-18 minutes depending on your oven. They are finished baking when they have a light golden brown colour on the bright saffron and when they have cracks in the sugar.
  • Let them cool completely. Then enjoy! Store in an airtight container, for longer storage, keep them in the fridge.
