Chewy White Chocolate Matcha Vegan Cookies (Small Batch)

Ingredients
  

  • 60 g unsalted butter, room temperature (vegan)
  • 50 g white granulated sugar
  • 22 g light brown muscovado sugar
  • ½ tsp pure vanilla extract
  • 1 + ⅓ tbsp plant milk I prefer oat milk
  • 74 g all purpose flour
  • ¾ tbsp culinary grade matcha I used from Sumo Matcha!
  • 12 g almond flour
  • ¾ tsp baking powder
  • ¼ tsp fine sea salt
  • cup white chocolate your favourite vegan brand 🙂
  • flaky sea salt for topping when the cookies have baked optional

Instructions
 

  • Preheat the oven to 180℃ and prepare one baking sheet.
  • Start by creaming the butter together with the sugars for about 2-5 minutes. I used an electric hand mixer for this.
  • Then add the milk and vanilla and mix again.
  • Now you can either sift in all the dry ingredients into a different mixing bowl and mix, or if you prefer you can sift in all the dry ingredients directly into the bowl with the wet ingredients.
  • Sift the dry ingredients into the bowl, then mix until just incorporated. Do not overmix. The cookie dough will feel a bit dry and crumbly at first but just keep gently mixing it will turn into a nice moist dough.
  • When it's almost mixed, fold in the white chocolate chunks.
  • Form 4 equally sized cookies and place them on the baking sheet. I always make sure to place a few chocolate chunks on top so the finished cookies look prettiest.
  • Bake the cookies for roughly 12 minutes depending on your oven. They are done baking when the edges have set. The middle can look a bit undone as they will continue to bake when the cookies are cooling outside the oven. You can sprinkle flakey sea salt on if you wish! But they are good either way!
  • When the cookies have cooled, enjoy!! 🙂
