Apple Pie Oatmeal – Healthy + Vegan
Do you love apple pie? Well then this recipe is perfect for you because this tastes like the real deal and you can even eat this for breakfast! The oatmeal is cooked with apple pie spices and it is topped with caramelised apples (YUM this is what really makes this recipe!!), applesauce, almond butter, and a sprinkle of granola for some crunch. The caramelised apples add a warm and sweet touch, it’s like you scooped out some apple pie filling and added it to a bowl of oatmeal. So here’s my recipe for a deeelicious breakfast. 😋

Apple Pie Oatmeal – Healthy + Vegan
Oatmeal with cinnamon and spice, topped with flavourful toppings like caramelised apples.
Ingredients
The Oatmeal
- 100 ml fibre enriched oats
- 200 ml water
- ½ tsp ceylon cinnamon
- ⅓ tsp cardamom
- pinch of nutmeg
- pinch of ginger
- ½ tsp pure vanilla extract
The Toppings
- almond butter
- applesauce
- granola
- oat milk or whichever plant milk you prefer
Caramelised Apple
- 1 apple I used royal gala because they're nice and sweet
- splash of maple syrup
- ½ tsp cinnamon or more!
- oil whichever neutral oil
Instructions
- Slice an apple into thin slices.
- Heat the oil in a frying pan on highish heat. After it's warmed up add the apple slices. Flip a few times and cook them until they've browned. This takes about five minutes.
- Reduce the heat to medium and add the splash of maple syrup and cinnamon and let the apple slices soften further. Stir occasionally.
- While waiting for the apples to be ready, mix all the oatmeal ingredients together and cook in the microwave for about two minutes.
- Once everything is ready add the apple slices to the oatmeal, and add the other toppings to the bowl as well as a splash of oat milk. Enjoy!
Notes
This recipe is written as a single serving but can be doubled easy as pie. 😉
