Healthy Chocolate Tahini Vegan Granola

This healthy chocolate tahini vegan granola is so amazingly delicious. It’s like eating dessert for breakfast, but this is totally good for you. This granola is full of healthy ingredients like quinoa, almonds, walnuts, oats, and more. This granola recipe is sweetened with maple syrup. Tahini is used to hold the granola together instead of using oil, so you’re getting much healthier fats with the tahini in this recipe. Tahini has lots of nutritious benefits like healthy fats, powerful antioxidants, protein, vitamins and minerals. Not to mention tahini gives the granola loads of delicious flavour! So I hope you’ll give this granola a try!

Granola is one of my absolute top favourite healthy breakfasts. There are soOo many flavour combinations the varieties are endless! Granola is also super easy to make at home, and that way you have total control over the ingredients and of how much sugar is added. Making your own granola is also much cheaper than buying it from the grocery store. So if you haven’t already tried, I totally suggest you try making homemade granola and this recipe is a fantastic place to start!!

One thing I extra love about this granola, is that when I eat it with plant milk, the oat milk turns all chocolatey from the granola so it’s like drinking super tasty chocolate milk with breakfast! Healthy Chocolate Tahini Vegan Granola

Ingredients
  

  • 3 ½ cups rolled oats
  • ½ cup puffed quinoa
  • cup almonds
  • cup walnuts
  • ½ cup tahini *
  • cup maple syrup
  • 50-55 ml unsweetened cocoa powder **
  • 2 tbsp brown sugar ***
  • 2 tsp pure vanilla extract
  • ½ tsp sea salt

AFTER baking

  • cup raw cacao nibs
  • cup coconut flakes

Instructions
 

  • Preheat the oven to 160°C.
  • Mix together all the ingredients (except for cacao nibs and coconut flakes!) in a big mixing bowl. Stir until everything is completely combined and everything is covered in the tahini and maple syrup.
  • Then spread out the granola evenly on a baking sheet covered with parchment paper or a silicon baking mat.
  • Bake the granola in the middle of the oven for 8 minutes, then take it out and stir. Spread out the granola evenly again and press down. This makes for bigger chunks. Bake for another 8-10 minutes but don't let the granola burn so keep an eye on it.
  • Let the granola cool untouched for about 35 minutes, it's important not to mix it now because then you'll get crumbly granola with no chunks.
  • Once the granola has cooled, you can mix in the cacao nibs and the coconut flakes. Store the granola in an airtight container. Enjoy with plant milk or yogurt or on top of smoothies! Delicious!

Notes

*Make sure it’s the light, creamy, and good quality tahini that doesn’t taste bitter. It should have a tasty light nutty flavour. I like using Corta’s tahini. 
**I’d suggest you start with the lesser amount of cocoa, and do a taste test. Unless you know for sure you love a strong chocolate flavour, then add the rest of the amount if you wish!
***This sugar is optional, but it helps make the granola extra clumpy. But if you want to cut back on sugar you can skip this. The flavour is equally delicious without the sugar, the granola might just not have as big chunks without this sugar.
