Healthier Vegan Pumpkin Scones

Healthier Vegan Pumpkin Scones
Ingredients
- 1 ¾ cups all purpose flour
- ¼ cup graham flour
- 4 tbsp cold vegan butter
- 2 tsp pumpkin spice
- 1 tsp baking powder
- ½ tsp baking soda
- pinch of sea salt
- 3 tbsp brown sugar or coconut sugar
- 1 ¼ cup pure pumpkin purée
- 2 tbsp oat milk
- 1 tsp pure vanilla extract
Instructions
- Preheat oven to 180°C.
- Mix together all of the dry ingredients in a medium sized mixing bowl. Then add the cold butter in cubes. Pinch the butter together with the dry mixture until coarse crumbs are produced as a result.
- Then mix the wet ingredients in a small bowl. Mix well. Pour the wet ingredients into the dry ingredients and mix until combined.
- Knead the dough slightly.
- Form 8 scones.
- Place the scones on baking sheets. Bake in the oven for 16-18 minutes until the edges have browned slightly.
- I like to eat these with vegan butter and cloudberry jam and a cup of coffee or tea. Enjoy!!
