Healthy Vegan Chocolate Orange Truffles
Ingredients
- 1 cup fresh medjool dates measured after the pits are removed
- ½ cup cashews raw unsalted
- ½ cup unsweetened coconut flakes
- ¼ cup raw cacao powder
- 2 tbsp freshly pressed juice from an orange
- 1 tbsp organic orange zest
- 1-2 tbsp coconut oil
- 1 tsp coconut flour
- pinch of sea salt
- squeeze of agave if needed
Toppings
- unsweetened shredded coconut
- extra raw cacao powder *
- cacao nibs *
Instructions
- Start by removing the pits from the medjool dates and measure.
- Add all of the ingredients (except for the toppings ingredients) to a food processor and mix until you've got the desired consistency. If you want really smooth truffles, mix well until quite smooth. But if you like a bit of crunchy texture, stop mixing earlier.
- When the mixing is complete, taste the truffle mixture and add more of anything if it's needed. Such as one time I tried with a different kind of dates and the truffle mixture had a less sweet taste than the medjool dates gave, so then I added a little squeeze of agave for balance. If the mixture is too wet then you can add a bit more of the dry ingredients, or vice versa.
- Let the truffle mixture cool in the fridge for about 20 minutes or so because then they will be easier to roll into round balls.
- Choose your choice of topping and prepare a small bowl with the topping inside so it's easy to roll the truffle around in the topping to coat them.
- Roll the truffle mixture in your hands into about 15 round truffles. Then roll the truffles into your choice of topping and spread them evenly out on a plate.
- You can enjoy these truffles right away or you can place them in the fridge to firm up a bit more. Store them in an airtight container in the fridge, or in a freezer safe container in the freezer so they last longer.
- Enjoy! 🙂
