Vegan Blood Orange Cardamom Poppy Seed Cake
This Vegan Blood Orange Cardamom Poppy Seed Cake is SO GOOD. It’s got loads of zesty fresh blood orange flavour that pairs beautifully with cardamom, pistachio and poppy seeds. This loaf cake is perfectly fluffy and moist, and covered with a sweet and zesty glaze and crunchy roasted pistachios. Delicious!
So it may sound like a whole bunch of different flavours in this one loaf, but they are sooo good together! Citrus and poppy seed anything is one of my favourite treats during citrus season and when the weather starts getting warmer. It’s just such a light and refreshing flavour combination. So go ahead and give this recipe a try because this vegan loaf cake has simple ingredients and it doesn’t take long at all to whip it together!
If you want to avoid excess sugar, the glaze is absolutely optional. I make this loaf without also and it’s amazing just as is. But the glaze is perfect for when you want just a little something extra for a special treat or if you’re serving this to guests and want it to be a little extra fancy. I love this plant based loaf cake and you’d never guess it was vegan. I hope you love it as much as I do!
Vegan Blood Orange Cardamom Poppy Seed Cake
Ingredients
Blood Orange Loaf Cake
- 1 tbsp chia seeds
- ¾ cup oat milk room temperature
- ¼ cup coconut cream the thick part from the top of a can
- 3 tbsp fresh blood orange juice
- 1 ½ tsp pure vanilla extract
- ⅓ cup coconut oil, melted
- 150 g granulated sugar (¾ cup)
- 205 g all purpose flour
- 32 g almond flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 ½ tbsp poppy seeds
- 2 tbsp organic blood orange zest
- 2 tsp cardamom
Blood Orange Glaze
- 2-3 tbsp freshly pressed blood orange
- 2 tbsp melted coconut oil
- ½ cup powdered icing sugar
Toppings
- handful roasted unsalted pistachios, roughly chopped
Instructions
- Preheat oven to 180°C and prepare a loaf pan.
- Zest the blood orange.
- Whisk chia seeds with oat milk, coconut cream, vanilla, and freshly squeezed blood orange juice. Set aside to thicken.
- Rub the zest together with sugar between your fingers.
- Whisk/sift all the dry ingredients together in a mixing bowl.
- Mix the coconut oil and sugar/zest mixture in with the rest of the wet ingredients.
- Combine the wet and dry mixtures until just combined. Don't over mix.
- Fill the loaf pan and bake in the oven for 37-40 minutes until a cake tester comes out basically clean.
- If you want to make the glaze, wait until the loaf has cooled before pouring over the glaze.
- To make the glaze simply whisk all the ingredients together. I sift in the sugar so the glaze is clump free. Then pour the glaze over the loaf. You can add more blood orange juice if the icing is too thick, or more powdered sugar if it's too runny.
- Crush/finely chop the pistachios and sprinkle over the loaf.
