Healthy Cherry Almond Vegan Crumble Bars (Gluten free)
These Healthy Cherry Almond Vegan Crumble Bars are sooooo gooood. They taste like summer. This recipe is super quick and easy to make and it’s absolutely delicious. Not only do these cherry almond crumble squares taste like summer, but they’re perfect to take on a picnic outside in the sun! Enjoy them with your favourite vegan vanilla ice cream or vanilla custard, or just as they are because they’re just that delicious!
Health Benefits
These Healthy Cherry Almond Vegan Crumble Bars use almond flour instead of all purpose flour in the crumble to add extra health benefits, such as plant based protein. Almond flour also adds really delicious flavour. Another healthy ingredient in this recipe can be almond butter instead of vegan butter in the crumble. Make sure it’s not dry almond butter at the bottom of the jar because then the crumble can turn out to be a bit too dry. But using almond butter adds extra healthy fats, fibre and protein and more.
If you don’t have a square baking pan or if you simply want a round cherry almond crumble, I’ve made this recipe in a round pan as well and it works beautifully!
These Healthy Cherry Almond Vegan Crumble Bars were inspired by a jar of cherry compote I had in my pantry. So if you don’t feel like putting much effort into an absolutely delicious plant based dessert, then you should definitely make this recipe. It was a big hit here at home. Healthy Cherry Almond Vegan Crumble Bars (Gluten Free)

The Crumble Ingredients
- 1 ⅔ Cup almond flour
- 1 C oats gluten free if you prefer/need
- ½ C packed light brown sugar or coconut sugar *
- 1 ½ tsp pure vanilla extract
- ¼ tsp baking soda
- ¼ tsp salt
- 8 tbsp melted vegan butter or coconut oil or almond butter **
- pinch of cardamom
Filling
- 2 C cherry compote
Decoration
- slivered almonds for decorating
Instructions
- Preheat the oven to 175°C. Prepare a square baking pan for the crumble – grease it or line with parchment paper.
- Mix all of the Crumble Ingredients together in a medium sized bowl. Mix until the ingredients are combined.
- Take 1 ⅔ C of the crumble and use that as the base. Pour into the baking pan and press down firmly so the base is smooth and evenly spread out.
- Scoop the cherry compote over the base.
- Sprinkle the remainder of the crumble mixture (approx 1 C) over the cherry compote.
- Sprinkle the slivered almonds over the crumble for a decoration.
- Bake the crumble for about 30 minutes or until the fruit is bubbling and the crumble has a golden coloured top.
- These Healthy Cherry Almond Vegan Crumble Bars are absolutely delicious enjoyed as is, or with a scoop of vegan vanilla ice cream, or vegan vanilla custard. Enjoy!!
