To make this Chocolate Cherry Healthy Vegan Cheesecake healthier than a regular cheesecake, yogurt is used to reduce fat content and calories. Instead of using refined sugar in this recipe, healthy dates are used to sweeten this cheesecake.

Ingredients
  

Cheesecake Filling

  • 150 g vegan cream cheese
  • 150 g vegan yogurt
  • splash of fresh lemon juice
  • 1 ½ tsp pure vanilla extract
  • 3 tbsp agave syrup

Cheesecake Base

  • ½ cup dates approx 8
  • ½ cup roasted hazelnuts
  • ½ cup roasted almonds
  • splash of pure vanilla extract
  • pinch of sea salt
  • 1 tbsp maple syrup
  • 3-4 tbsp raw cacao powder
  • 1-2 tbsp coconut oil

Toppings

  • raw cacao nibs
  • fresh cherries

Instructions
 

  • Add all of the ingredients for the base in a food processor. Mix until the mixture is consistent of small pieces, and sticks together.
  • Press the base mixture in a pie form, or small muffin forms if you want mini cheesecakes.
  • Spread out a layer cherries on top of the chocolate base.
  • Mix all of the cheesecake filling ingredients together in a mixing bowl with a whisk or electric hand mixer. Taste test the mixture to see if you'd like to add more sweetener or lemon, etc.
  • Pour the cheesecake filling over the cherries and crust.
  • Place the cheesecakes in the freezer until set.
  • Once the cheesecakes have set, decorate them with fresh cherries and raw cacao nibs. Enjoy!
