Rosemary Caramelised Peaches
These Rosemary Caramelised Peaches are a delightful summer snack or treat. They are savoury and sweet and warm. The contrast of the warm peaches pairs beautifully with your favourite cold vegan ice cream or plant based yogurt! I chose to top mine with coconut flakes as well for added flavour. These peaches are also delicious with granola, or roasted nuts and seeds. Or on oatmeal! The options are endless. I can’t get enough of these rosemary peaches, they’ve been a favourite this summer. Rosemary Caramelised Peaches
Ingredients
- 2 fresh peaches
- 1 tbsp coconut oil
- 2 sprigs fresh rosemary
- 2-3 tbsp coconut sugar or liquid sweetener
- splash of pure vanilla extract
Instructions
- Slice the peaches in small segments.
- Melt the coconut oil in a pan over medium heat. Add the rosemary.
- Add the peaches, sweetener, and vanilla.
- Stir the peaches after a while, so both sides of the peach slices are evenly softened.
- Remove the peaches from the stove once they are soft and sweetened. Let them cool a minute or two before adding the peaches to your favourite plant based yogurt or ice cream! Don't forget to use the syrup from the peaches in the pan too! Enjoy!
