These Maple Caramel Pumpkin Spice Dates are the ideal snack for fall! They are healthy, vegan, gluten free and refined sugar free so they’re basically for anyone! They’re so perfectly balanced with warming pumpkin spice, creamy caramelly dates with that silky pumpkin filling. To top it all off they’ve got a delicious maple drizzle with a bit of crunch from the toasted pecans! DELISH. These lil bites are a treat so good you’ll have a very hard time believing they’re nourishing for your body. I absolutely love stuffed medjool dates (like these on my blog with peanut butter!), they’re such a delicious healthy vegan snack!

These Maple Caramel Pumpkin Spice Dates are made with only nourishing whole ingredients, therefore they are healthy and refined sugar free. This recipe does have a few tablespoons maple syrup, but it only comes out to be about 1 teaspoon or less per stuffed date. There is protein from the cashew butter and pecans, and lots of fibre and vitamins from the dates and pumpkin. So you can absolutely feel great about snacking on these super tasty stuffed medjool dates. They won’t give you a blood sugar crash 10 minutes after eating them because they are well balanced treats! A totally dreamy healthy vegan snack.

Ingredients
  

Pumpkin Spice Filling

  • cup pure pumpkin purée
  • approx ½ tsp pumpkin spice
  • ½ tsp pure vanilla extract
  • 1 tbsp cashew butter
  • 1 tbsp maple syrup taste test, add more if desired

Maple Cashew Drizzle

  • 2 tbsp cashew butter
  • 3 tbsp maple syrup
  • sprinkle of sea salt
  • ¼ tsp maple extract optional
  • 1-2 tsp plant based milk, if needed

Other

  • 10 medjool dates
  • toasted pecans

Instructions
 

  • Add all of the pumpkin filling ingredients in a mixing bowl and mix together by hand or with electric mixer, or if you have a small blender jug attachment then you can mix them in your blender. I used my small Vitamix attachment. Mix until whipped and creamy. Adjust the flavour by adding more spice or syrup if you wish.
  • Then add the maple caramel ingredients to a mixer or bowl and mix until it forms a caramel texture. Add the milk after if the texture is still too thick.
  • Make a lengthwise slit in the medjool dates and remove the pits from the dates. Fill the dates with the pumpkin filling.
  • Drizzle the maple caramel over the stuffed dates.
  • Chop the toasted pecans in small pieces. Sprinkle the pecans over the dates.
  • Either enjoy the dates immediately or freeze the dates first for 20-30 minutes so they firm up a bit.
  • Store the dates in the freezer so they stay fresh longer, and you'll have a tasty and healthy snack ready for whenever you get a craving! Enjoy!!
