Mint Oreo Healthier Vegan Ice Cream
This Mint Oreo Healthier Vegan Ice Cream is so luscious! It’s super creamy and minty fresh with delicious little Oreo pieces throughout each scoop! Can it get any better than that?? I doubt it! I personally loOove mint and chocolate together. Mint chip is one of my favourite ice cream flavours. But mint OREO takes it to a whole other level!
This plant based ice cream has tasty Oreo bits and a coool mint flavour. The mint flavour can be achieved with either fresh mint leaves or mint extract. It’s a personal preference that depends on a few things. If you have a strong blender (I use Vitamix), you can use fresh mint leaves because the blender will make them disappear. But if your blender leaves small pieces of mint leaves behind that you would like to remove, you can pour the ice cream mix through a strainer to get those pieces out. If you do not have mint leaves, then you can simply use pure mint extract. But make sure it’s of good quality. The cheaper ones I find don’t taste very good and not like actual mint.

This Mint Oreo Healthier Vegan Ice Cream is healthier because it has cashews that are a great source of healthy fats and protein. This means you will feel more full and satisfied when you eat this ice cream because it isn’t just empty calories and you can more easily avoid a sugar crash. This plant based ice cream also uses lower fat vegan cream instead of heavy whipped cream like in traditional ice cream. The amount of sugar in this recipe is also lower, but you can use more or less sugar than I’ve recommended. It’s up to your taste buds! 🙂
This recipe was inspired by my love for the mint Oreo Blizzard! I always used to order that flavour from Dairy Queen when I was little. They stopped selling it though and that was a sad day for me haha. So obviously I had to veganise this ice cream flavour so I can have it whenever I want! Now you can too with this recipe! Mint Oreo Healthier Vegan Ice Cream
Equipment
- Ice Cream Machine
- High Speed Blender
Ingredients
- 2 cups plant based cream I used Oatly's creamy oat which is lower in fat
- ½ cup raw cane sugar, or other granulated sugar
- 1 ½ tsp pure vanilla extract
- ½ cup raw cashews soaked for about 5 hours
- large handful mint leaves
- 1 ½ – 2 tsp pure mint extract, to taste
- approx 1 tsp matcha or spirulina to add natural green colouring, optional spinach works great too! doesn't taste at all but gives beautiful colour
- pinch of salt
- Oreos*
Instructions
- Start by soaking the cashews in water for about 5 hours, or overnight.
- Pour the cream and sugar into a pan on medium heat. Stir until the sugar has dissolved completely in the cream.
- Then stir in the mint, vanilla, salt, and the food colouring you have chosen to use. Mix until combined and let cool to room temperature.
- Rinse the cashews and pour them into your blender.
- Pour the creamy mixture into your blender with the cashews. Mix until completely smooth.
- Once the ice cream mixture is completely smoooth, taste test and adjust as needed. Or add more colouring if you want a stronger green colour.
- Chill the ice cream mixture.
- Pour the chilled mixture into your ice cream machine and follow the manufacturer's instructions.
- Once the program is complete, add in the oreos as you transfer the ice cream from your machine to a freezer safe container. I discovered that if you add the oreos to the ice cream machine too soon as you churn, you will end up with grey ice cream! Trial and error right?? haha
