Rosemary Caramelised Pear Vegan Oatmeal
This Rosemary Caramelised Pear Vegan Oatmeal has incredible flavour. Pears are so sweet and delicious, and the rosemary adds great aromatic flavours. I looove adding rosemary to sweet dishes, it’s such an exciting flavour combination. Aside from the protein in the oats, roasted pecans adds extra protein to this steel cut oatmeal but also wonderful crunch! For even more protein in this breakfast you can easily add some tasty homemade cashew butter! Cashew butter is so great because it’s got healthy vegan fats and protein, but also adds creamy deliciousness to every recipe!
This Rosemary Caramelised Pear Vegan Oatmeal is made with steel cut oats, instead of rolled oats. If you’re wondering what the difference is between rolled oats and steel cut oats, I’ll help you out! Steel cut oats are the ”whole oat kernel that has been cut into two or three pieces using steel disks. This type of oats contains the highest amount of fiber, as it is least processed.” Since they are less processed and contain more fibre, they are a bit more chewy and have more flavour! They are also more filling for a longer period of time because it takes your body more time to digest steel oats than rolled oats. That is exactly what you want in a healthy breakfast, a delicious meal that will leave you satisfied until lunch! Heavenly!

Rosemary Caramelised Pear Vegan Oatmeal
Ingredients
- 2-3 sprigs fresh rosemary
- 2-3 pears not too ripe! they need to be firm so they don't get mushy and too sweet
- 1 – 2 tbsp coconut oil
- maple syrup
- 2 tsp pure vanilla extract
- rounded ¾ cup steel cut oats 200 ml
- 2 cups water
- big pinch sea salt
Toppings
- oat milk
- toasted pecans
- puffed quinoa
Instructions
- Slice the pears in half and remove the seeds. Peel the pears if you wish.
- Add the oats, water, and salt to a saucepan and stir together. Cook the oats following the instructions on the bag. I cooked mine for about 8 minutes, stirring occasionally.
- While the oats are cooking, melt the coconut oil in a pan over medium heat. Add the rosemary.
- Then place the pears in the pan with a splash or two of maple syrup and vanilla.
- Cook the pears until they get golden brown and caramelised on both sides. Try to avoid excessive flipping so they keep their pretty pear shape.
- Once the oatmeal is close to being done, add a splash or two of vanilla extract, and maple syrup. Mix and combine.
- When the pears and oatmeal are ready, add the oatmeal to two bowls and place pear slices on top. Then sprinkle the bowls with puffed quinoa, chopped pecans, and leftover syrup from the pear frying pan! So good!!!
- Pour as much oat milk into your bowl as you wish and enjoy!!
