This Healthy Mint Chocolate Chip Smoothie (Vegan + Gluten Free) is such an amazing way to use up some of that summer zucchini. I find that zucchini plants just keep on giving alllll season long so I always find myself with an abundance of zucchini!! So aside from cooking with it and making zucchini bread, I love freezing zucchini in pieces! Then I can toss them into my smoothies! They add lovely texture, great nutrients, but the flavour is so subtle that it won’t affect your smoothie even if you are making a sweet smoothie! Dreamy!
