I find that zucchini plants just keep on giving alllll season long so I always find myself with an abundance of zucchini!! So aside from cooking with it and making zucchini bread, I love freezing zucchini in pieces! Then I can toss them into my smoothies! They add lovely texture, great nutrients, but the flavour is so subtle that it won’t affect your smoothie even if you are making a sweet smoothie! Dreamy!

Healthy Mint Chocolate Chip Smoothie (Vegan + Gluten Free)

Ingredients
  

  • cup frozen mango pieces
  • ¾ cup frozen banana slices approx one banana
  • ¼ cup frozen spinach mine is chopped and frozen so it's compact, otherwise you can use a handful of fresh spinach
  • cup frozen zucchini slices
  • 1 tsp spirulina powder
  • handful of fresh mint leaves
  • raw cacao nibs
  • water just enough to get your mixer going

Equipment

  • High Speed Blender

Method
 

  1. Add all of the ingredients except for the cacao nibs to a blender. If you want a thicker smoothie add just enough water to the blender to get it mixing, or add more water if you want a runnier smoothie.
  2. When the smoothie has become completely smooth, add in some cacao nibs and pulse the blender to make the nibs a bit smaller. Or simply mix them in if you want bigger pieces.
  3. Pour the smoothie in a glass and enjoy!
