Creamy Peppermint Mochas are one of my favourite holiday drinks. They are just so festive for me. And it’s one of my favourite flavour combos, chocolate and mint! So naturally I love my holiday brownie cookies with the same Peppermint Mocha flavour profile as well. They’re soo delicious! Feel free to adjust the ingredients to suit your taste preferences—some might prefer a stronger chocolate flavour or a more pronounced peppermint taste. Experimenting with different plant-based milks and types of vegan chocolate can also bring variations in flavour to your homemade peppermint mocha! You can top it off with a dollop of vegan whipped cream and a sprinkle of crushed candy canes or a dusting of cocoa powder for an extra festive touch. Creamy Peppermint Mocha (Vegan + Gluten Free)
Ingredients
- one shot freshly brewed espresso
- ⅔ cup oat milk add more if you like milky coffee or less
- splash pure vanilla extract
- small splash pure peppermint extract approx ¼ tsp, adjust to taste
- 1 tbsp raw cacao powder adjust to taste
- optional sweetener such as agave
- ¼ cup oat milk for frothing
Instructions
- Make a fresh shot of espresso.
- Depending on how strong you like your coffee, steam the desired amount of oat milk to go with one 1 shot of espresso. Or if you don't have a steamer you can heat the milk in a small saucepan or in a mug in the microwave.
- Mix in an approximate tablespoon of raw cacao powder, a small splash peppermint extract and pure vanilla extract in with the milk. I used a milk frother to mix it all together.
- Add the espresso shot and mix again. Personally I didn’t add sweetener but you can add agave if you wish for added sweetener.
- Taste and adjust as necessary.
- Top with foamed oat milk and cacao powder dusting.
- Enjoy!
