This recipe combines the richness of feta cheese with the crispiness of phyllo dough, the nuttiness of sesame seeds, and the sweetness of honey. This recipe is super quick and easy to make but it is absolutely delicious and feels like a very fancy one! Eating this delicious appetiser for the first time is something I frequently dream about. Sitting outside at the little Greek taverna on a beautiful and sleepy little Greek Island eating this crispy baked feta and the best greek salad I’ve ever had. It was one of those core memories I’ll never forget. So of course I had to recreate this recipe at home to relive a little piece of that dreamy time!

The star of this culinary creation is the feta cheese, a cheese known for its tangy and salty flavour. I absolutely love feta it is such a versatile cheese! It’s amazing that it can be eaten with sweet flavours (such as my Watermelon Feta Mint Cucumber Salad) and with salty flavours! Both are absolutely delicious! So let’s get into this recipe!

Process

To prepare this Greek Crispy Phyllo Baked Feta, a block of feta is placed on a bed of layers of delicate phyllo dough, which adds a crispy and flaky texture to the dish. Now from what I’ve been told this recipe is traditionally pan fried, but I prefer the convenient oven method. That means less oil is used and the oven gets to do the work instead which is nice! As the dish bakes in the oven, the phyllo dough turns crispy and golden. This creates a beautiful contrast to the deliciously soft and creamy feta inside. The feta cheese becomes warm and slightly melted, making it a luscious and savoury element in each bite.

Minimal effort and a delicious result, doesn’t get much better! This recipe comes together in no time so you can be enjoying this in a half hour or less! Ingredients
  

  • 150 g package of feta cheese (I split a 150g package in two for this recipe)
  • 2 sheets phyllo dough
  • olive oil
  • black and white sesame seeds
  • honey or agave syrup

Instructions
 

  • Preheat the oven to 180℃ and prepare a baking sheet.
  • I used one sheet of filo/phyllo dough per piece of feta. In other words, one 75 g feta rectangle wrapped in one sheet of filo. This is a personal preference though, if you want more crunch you can use more dough.
  • Place one sheet out flat and brush it lightly with olive oil. This will make it easy to fold and wrap around the feta.
  • Place the feta near the smaller end of the dough, a few centimetres up from the bottom.
  • Fold the bottom of the sheet over the feta and then the sides. Roll the feta upwards along the sheet until the feta is completely wrapped by the whole phyllo sheet. Repeat with the next piece.
  • Then brush the outside with some more olive oil and sprinkle the toasted sesame seeds on the feta parcels.
  • Bake the feta pockets for about 20 minutes or until they are completely golden brown.
  • Once they are out of the oven, drizzle honey over the phyllo wrapped feta.
